Strawberry Arugula Salad with Lime Vinaigrette

 

Strawberry Arugula Salad with Lime Vinaigrette

Yields: 2 Servings

Ingredients:

  • 1/2 cup strawberries, hulled and thinly sliced
  • 5 cups baby arugula
  • 2 ounces parmesan cheese, graded
  • 1 1/2 teaspoons dijon mustard
  • 1 1/2 teaspoons sugar
  • 1 tablespoons fresh lime juice
  • 2 tablespoons fresh orange juice
  • 2 tablespoons extra-virgin olive oil
  • Sea salt, to taste
  • Freshly ground pepper, to taste

 

Preparation:

In a glass bowl whisk together the mustard, sugar, lime juice and orange juice, whisking to dissolve all the ingredients. Add the olive oil in slowly while whisking with the other hand.  Taste and season with a pinch of salt, if needed, and a grind or two of pepper.

Strawberry Arugula Salad with Lime Vinaigrette

Toss the strawberry slices, arugula and parmesan cheese in a large bowl.

Toss the salad with some of the dressing and serve the rest on the side.
