Pasta Milano a la Romano’s Macaroni Grill

Pasta Milano a la Romano’s Macaroni Grill

Yields: 4 Servings 

Ingredients:

  • 12 ounces chicken breast halves
1 teaspoon garlic powder
  • 1 1/2 teaspoons sea salt, divided
  • 3/4 teaspoon freshly ground black pepper, divided
  • 16 ounces Farfalle (bow tie) pasta
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon unsalted butter
  • 1 cup sun-dried tomatoes, julienned
  • 10 ounces white button mushrooms, sliced
16 ounces heavy cream
  • 1 small head garlic, roasted
  • 1⁄2 teaspoon freshly ground black pepper
  • 1/2 cup Parmesan cheese, grated plus more for serving
  • Fresh Italian parsley, chopped for garnish

 

Preparation:

Mix garlic powder, 1/2 teaspoon sea salt, and 1/4 teaspoon freshly ground black pepper and sprinkle on chicken.

Grill chicken on a cast-iron grill pan or outside on the barbecue grill, until it is done all the way through. Set chicken aside.

Place pasta in salted boiling water and cook for 8-10 minutes or until al dente. Drain.

Meanwhile sauté the mushrooms and tomatoes in butter and extra-virgin olive oil until soft.

Place heavy cream, roasted garlic, 1/2 teaspoon freshly ground black pepper, 1/2 teaspoon sea salt, and 1/2 cup parmesan cheese in food blender and puree.

Place cream mixture in a large sauce pan and bring to a boil. Turn down heat and simmer for 15 minutes or until sauce has thickened.

Mix in mushrooms and tomato mixture and the cooked pasta.

Slice the grilled chicken and to the pasta and toss.

Garnish with fresh Italian parsley and grated Parmesan cheese. Serve with Caesar salad and garlic bread.
