Orange Chicken Meatballs

Orange Chicken Meatballs

Ingredients:

  • 1/4 cup milk
  • 1/4 cup Panko breadcrumbs
  • 1 1/2 pounds ground chicken
  • 4 cloves garlic, minced
  • 2 teaspoons fresh ginger, minced
  • 2 tablespoons green onions, minced
  • 2 tablespoons soy sauce
  • 1/4 teaspoons sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 1/2 teaspoon toasted sesame oil
  • 1 1/2 teaspoons olive oil
  • 1 1/2 teaspoons crushed red pepper flakes
  • 3/4 cup orange marmalade
  • 1/4 cup hoisin sauce

 

Preparation:

Preheat oven to 500 degrees Fahrenheit. Combine your milk and Panko breadcrumbs in a small bowl. Stir it and then set aside for 5 minutes.

In a large glass bowl, add your chicken, 2 teaspoons garlic, 1 teaspoon ginger, green onions, soy sauce, sea salt, freshly ground black pepper and milk-soaked breadcrumbs and mix.

Use approximately 2-3 tablespoons of the mixture per meatball and place them in a greased mini muffin tin and bake for 12 to 15 minutes.

Prepare the orange sauce by adding the sesame oil and olive oil in a small saucepan on a medium-low heat. Add 2 teaspoons garlic and 1 teaspoon ginger and let cook for about 2 minutes until the garlic and ginger are golden brown.

Add the red pepper flakes, orange marmalade and hoisin sauce and stir until thickened.

Once the meatballs are cooked, place the, in a large glass bowl. Pour the sauce over the meatballs and toss until all of the meatballs are coated.

Serve over brown rice and garnish with green onions.
