Mango Lime Sauced Chicken Thighs

 

Mango Lime Sauced Chicken Thighs

Yields: 4 Servings

Ingredients:

  • 4 boneless, skinless chicken thighs
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon cayenne pepper, divided
  • 1 large mango, peeled, pitted, and cubed
  • 2 tablespoons brown sugar
  • 1 teaspoon lime zest
  • 1 tablespoon lime juice
  • 2 teaspoons Worcestershire sauce

 

Preparation:

Preheat grill, reduce to medium and set for indirect cooking.

In a small glass bowl, mix together the sea salt, nutmeg and 1/8 teaspoon cayenne pepper. Sprinkle over the chicken and rub in with your fingers.

In a small food processor, combine mango, brown sugar, lime zest, lime juice, Worcestershire sauce and 1/8 teaspoon cayenne pepper. Blend or process until smooth then set aside.

Place chicken on the grill, covered for 20 to 30 minutes until chicken is no longer pink and the internal temperature is 180 degrees F, turning once half way through the cooking process and brush with the sauce.
