Hasselback Caprese Chicken

Hasselback Caprese Chicken

Yields: 2 Servings

Ingredients:

  • 2 chicken breasts halves
  • Buffalo mozzarella cheese, sliced
  • 1-2 Roma tomatoes; halved lengthwise and sliced
  • 12-14 Basil leaves
  • 1 teaspoon Italian seasoning
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 3 teaspoons extra-virgin olive oil
  • 2 teaspoons balsamic vinegar

 

Preparation:

Place the chicken breasts on a cutting board. Using a sharp knife, cut slits across the chicken breast about 3/4 of the way through the chicken breast being careful not to cut all the way through. Depending on the size of your chicken breast, you’re going to want around 6 to 8 slits per chicken breast.

Stuff each slit with a slice of mozzarella cheese, tomato and a basil leaf.

Place chicken breasts in a stone baking dish or a baking sheet that has been coated with non-stick baking spray.  Brush each chicken breast with 1 teaspoon olive oil and season each chicken breast with sea salt, freshly ground black pepper and Italian seasoning.

Bake in a preheated 400 degree F oven for 30 minutes or until the internal temperature of the chicken reaches 160 degrees.

Plate chicken and drizzle each breast half with 1 teaspoon extra-virgin olive oil and 1 teaspoon balsamic vinegar. Serve with your favorite sides.
