Grilled Chicken and Tomato Salad

Grilled Chicken and Tomato Salad

Yields: 2 Servings

Ingredients:

  • 2 (6-ounce) boneless, skinless chicken breast halves
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon freshly ground black pepper
  • Olive oil cooking spray
  • 4 cups mixed green lettuce
  • 1/2 cup multicolored cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 3 tablespoons olive oil and vinegar salad dressing, divided
  • 1/4 cup crumbled goat cheese

 

Preparation:

Heat a cast-iron grill pan over medium-high heat. Sprinkle chicken with sea salt and freshly ground black pepper. Coat pan with cooking spray. Place chicken in pan; cook 6 minutes on each side or until done.

While chicken cooks, combine mixed greens, tomatoes, onion and 2 tablespoons dressing; toss gently.

Arrange about 2 cups salad on each of 4 plates; top each with 2 tablespoons goat cheese. Brush chicken with remaining 1 tablespoon dressing. Cut chicken into slices. Arrange 1 sliced chicken breast half on each salad.
