Chuck Wagon Casserole

Prep time: 15 minutes
Cook time: 30 minutes
Total time: 45 minutes

Yields: 6 Servings

Ingredients:

  • 1 white onion, chopped
  • 1 red bell pepper, chopped
  • 1 pound lean (93/7) ground beef
  • 1 can (15 ounces) mild chili beans in sauce
  • 3/4 cup barbecue sauce
  • 2 package (8 1/2 ounces) Jiffy® corn muffin mix
  • 1 can (11 ounces) Mexican-style corn, drained

 

Preparation:

Preheat oven to 400 degrees F. In a skillet brown the ground beef with the onion and bell pepper over medium heat 8-10 minutes or until beef is no longer pink; drain.

Stir in chili beans, barbecue sauce.

Spoon into a baking dish.

In a bowl prepare corn muffin mix according to package directions;

stir in corn.

Spoon over meat mixture.

Bake 30 minutes or until golden brown.
