21 Day Fix Watermelon and Feta Salad

Portion Control Containers: 1 green, 1 Purple, 1 Blue, 1 Orange

Yields: Serves 2

Ingredients:

  • 2 tablespoons white-wine vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon orange juice
  • 1 tablespoon lemon juice
  • 1 tablespoon shallots, minced
  • 1 teaspoon raw honey
  • Course sea salt, to taste
  • Freshly ground black pepper, to taste
  • 2 cups baby arugula
  • 1/4 medium red onion, thinly sliced
  • 2 cups chilled seedless watermelon, rind removed, cut into small chunks
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon whole fresh mint leaves, julienned

Preparation:

In a small bowl, Whisk together the orange juice, lemon juice, shallots, honey, vinegar and oil. Season vinaigrette with sea salt and freshly ground black pepper.

In a large bowl, place the arugula, onion, watermelon, feta, and mint in a large bowl. Drizzle with 5 tablespoons of vinaigrette to coat the greens lightly and toss well. Taste for seasonings and serve immediately.
