21 Day Fix Arugula, Roasted Wild Cherry Tomatoes and Goat Cheese Salad

Yields: 2 Servings
Ingredients:
- 3/4 cup wild cherry tomatoes, halved
- 5 tablespoons balsamic vinaigrette
- Cooking spray
- 2 cups loosely packed baby arugula
- 1/4 cup red onion, thinly sliced
- 1/2 cup goat cheese, crumbled
- 1/4 teaspoon freshly ground black pepper
Preparation:
Preheat oven to 350 degrees F. Combine the tomatoes and 2 tablespoons balsamic vinaigrette; toss well to coat.
Arrange tomatoes, cut sides up, on a rimmed baking pan coated with cooking spray.
Bake at 350 degrees F for 20 minutes or until tomatoes soften. Cool completely.
Combine tomatoes, baby arugula, goat cheese and onion in a large bowl. Drizzle with the remaining 3 tablespoons balsamic vinaigrette; toss gently to coat. Sprinkle with freshly ground black pepper.
